Chicken with Oak Honey and Lemongrass

For 4 to 6 people
Ingredients:
- 1 free-range chicken
 - 2 lemongrass stalks
 - 3 garlic cloves
 - 3 cm fresh ginger
 - Juice of one lemon
 - A pinch of cayenne pepper powder
 - 3 tbsp oak honey
 - 3 tbsp soy sauce
 
Preparation:
- Cut the chicken into pieces.
 - Remove the tough ends of the lemongrass stalks.
 - Peel the ginger and garlic cloves.
 - Place the lemongrass, garlic, ginger, and cayenne pepper in a blender and process until a paste forms.
 - In a mixing bowl, combine the honey, soy sauce, and lemon juice. Add the blended mixture and mix well.
 - Pour the marinade over the chicken pieces. Cover the dish with plastic wrap and refrigerate for 5h.
 - Preheat the oven to 180°C.
 - Place the chicken in the oven and cook for 10 mins, turning the pieces once and basting them with the marinade.
 - Serve with sautéed vegetables and a herb salad.
