Grilled Fish with Zaatar & Sesame Sauce-Tarator

Ingredients:
For the fish:
- 2 nice slices of tuna or swordfish
- White rice
- One lime or combava lime
- Premium Zaatar
- Sesame Sauce - Tarator
For the “chien” (traditional Caribbean) sauce:
- 4 tbsp sunflower oil
- One bunch of parsley
- A few spring onions
- One onion
- One mild chili pepper (optional)
Preparation:
- One hour before cooking, place the fish in a dish, drizzle with lime or combava juice, then sprinkle with za'atar on both sides. Let it marinate.
- Prepare the barbecue. A little tip: if you have one, place a banana leaf on the grill to prevent the fish from sticking during cooking.
- Cook the fish on the barbecue while keeping a close eye on the cooking process. Baste it from time to time with the “chien” (traditional Caribbean) sauce.
- Serve the fish with white rice and Terroirs du Liban Sesame Sauce - Tarator.
