Stir-Fried Noodles & Shrimp with Rose Chili Paste

For 2 people
Ingredients:
- 150g rice noodles
 - 200g shrimp
 - 50g edamame
 - 1 carrot
 - 1 bell pepper
 - 10 flat green beans
 - 1 tbsp olive oil
 - 1 garlic clove
 - 1 onion
 - 1 tbsp chili paste with rose petals
 - 10g ginger
 - ½ lemon
 - 20 fresh coriander leaves
 - 1 pinch of salt and pepper
 - 2 tbsp peanuts
 
Preparation:
- Peel the shrimp and set aside.
 - Slice the carrot and bell pepper into thin strips.
 - Separately chop the garlic, onion, ginger, and peanuts.
 - In a saucepan, bring water to a boil.
 - Cook the rice noodles for 5 mins, then drain.
 - In a frying pan, heat the olive oil over medium heat and sauté the garlic and onion. Add the shrimp, carrots, flat green beans, bell peppers, and ginger.
 - Cook for 2 mins. Add the rice noodles and continue to cook for 3 mins.
 - In a small bowl, mix the chili paste with rose petals with the juice of half a lemon.
 - Pour the sauce over the noodles and cook for 2 more mins.
 - Place the noodles on a plate.
 - Top with edamame, and sprinkle with fresh coriander leaves and chopped peanuts
