Pistachio & Rose Syrup Cookies

For 10 cookies 

 

 

Ingredients:

 

  • 120g softened butter  
  • 60g brown sugar  
  • 40g white sugar  
  • 3 tbsp Rose Syrup  
  • 1 egg  
  • 200g plain flour  
  • ½ tsp baking soda (or baking powder)  
  • 1 pinch of salt  
  • 80g unsalted pistachios, roughly chopped  
  • 80g white chocolate chips  
  • Few edible rose petals for decoration (optional) 

 

Preparation:

 

  1. In a mixing bowl, cream together the softened butter, brown sugar and white sugar until light and fluffy. 
  2. Add the egg and Terroirs du Liban Rose Syrup. Mix until smooth.  
  3. Stir in the flour, baking soda, and salt. Mix gently until just combined.  
  4. Add three-quarters of the chopped pistachios and white chocolate chips. Reserve the remaining portion for the topping.  
  5. Refrigerate the dough for 15 to 20 mins 
  6. Preheat the oven to 180°C. Shape the dough into 10 equal balls and place them on a lined baking tray.  
  7. Sprinkle the remaining pistachios and white chocolate chips over the cookies.  
  8. Bake for 9 to 11 mins, until the edges are lightly golden.  
  9. Once out of the oven, gently brush the cookies with a small amount of Terroirs du Liban Rose Syrup to enhance the floral notes.    
  10. Allow to cool slightly before serving.
