Multi-Grain Braided Brioche with Orange Blossom Water

For 1 brioche
Ingredients:
- 575 g fine wheat flour
 - 25 g fresh yeast
 - 70 g sugar
 - 4 eggs
 - 80 ml warm milk
 - 200 g semi-salted butter, softened
 - 3 tbsp orange blossom water
 
Utensils:
- Cake tin
 - Food processor
 
Preparation:
- Take the eggs and milk out of the fridge to bring them room temperature.
 - In a large bowl, start by mixing all the liquids: milk, eggs, and softened butter (not melted, to obtain an airy crumb).
 - Add the fine wheat flour, sugar and fresh yeast to the mixture.
 - Knead in a food processor or by hand until the mixture is smooth and homogeneous.
 - Let the dough rise in a warm place or in the oven at 30°C, placing a container of water at the bottom of the oven, as the dough needs a little heat and humidity to rise. Allow 2h 30 mins for rising.
 - Punch down the dough on a floured surface and shape as desired.
 - Brush with a mixture of beaten egg and milk.
 - Let it rest under a tea towel for an extra 30 mins.
 - Bake at 175°C fan-forced for 30 mins.
