Crispy Kamouneh Pancakes & Wild Herb Salad

For 4 people
Ingredients:
- 100g kamouneh mix
 - 1 onion
 - 2 eggs
 - 4 rusks (or breadsticks) or 4 tbsp breadcrumbs
 - Fleur de sel
 - Olive oil
 - A handful of roasted almonds
 - Sorrel leaves, fennel leaves or any other salad greens
 - 1 tbsp pomegranate molasses
 
Preparation:
- Finely chop the onion and set aside.
 - Beat the eggs with the fleur de sel, the crumbled rusks or the 4 tbsp of breadcrumbs.
 - Pour the mixture over the kamouneh and combine well.
 - Form small pancakes.
 - Heat some oil in a pan.
 - When it is hot, place the small patties and let them cook for 4 mins on each side.
 - Arrange the patties on the salad leaves.
 - Pour in a drizzle of pomegranate molasses, and add a few roasted almonds.
